(Recipe for 6 servings)
cooked, cubed 1 1/2 cup
chopped 2 cups
Granny Smith, unpeeled, cored and diced 2 cups
light 2 Tbsp.
plain, low-fat 2 Tbsp.
& Pepper To taste
cheese (optional) 6 Tbsp.
a large bowl, combine chicken, celery, apples and raisins. In
a small bowl, combine the rest of ingredients and fold into chicken
mix. Serve on crispy lettuce leaves and garnish lightly with grated
low-fat Cheddar cheese.
Make this soup the night before and let it cool over night. Preheat
your soup in the morning and take it with you to work in a thermos.
