Tuna
Avocado Sandwich
(4 SERVINGS)
Ingredients:
1
can (7-ounces) can tuna packed in spring water, drained
1/2 cup celery, diced
1 avocado, diced
1
hard-cooked egg, peeled
4 tablespoon of light mayonnaise
1/2 teaspoon oregano
1/4 teaspoon salt
1/8 teaspoon pepper
Serve with 8 slices of whole grain bread
Directions:
Add all the ingredients in a food processor. Pulsate food processor
about 5 times. You can also cut and mix all the ingredients by hand.
You want ingredients well mixed; however, only coarsely chopped.
With
a tablespoon, spread chicken salad mixture on a slice of bread and
top with second bread slice.
Important:
Wrap each sandwich in plastic wrap and place it in a plastic container
to take it with you to work or picnic.
