Tuna Salad Sandwich
(4 SERVINGS)

Ingredients:

1 can (7-ounces) can tuna packed in spring water, drained
1/4 cup sweet relish (or cucumber thinly sliced)
4 tablespoons of light mayonnaise
1 tablespoons of mustard
1/4 teaspoon sea salt
1 tomato, thinly sliced
1 cup of spinach leaves
8 slices whole grain bread

Directions:
In a mixing bowl, place the tuna and then add the relish, mayonnaise, mustard and salt. Mix until the mayonnaise covers the tuna.

Spread tuna mixture on a slice of bread, add 2 tomato slices, few leafs of spinach and top with an additional bread slice.

Important: Wrap each sandwich in plastic wrap and place it in a plastic container to take it with you to work or picnic.
