CHICK PEA SALAD (2 SERVINGS)

This simple recipe is ideal for lunch. It is best to mix all the ingredients 10 minutes before serving.

Ingredients:

  • Chick Peas /Garbanzo Beans (2 cups, cooked the day before and cooled overnight in the refrigerator)
  • Canned Tuna (200g)
  • Celery (1stick)
  • Juice of lemon (2 tbspn)
  • Plain Yogurt (2 tbspn)
  • Mustard (1/2 tspn)
  • Mayonnaise (1 tbspn)
  • Salt, pepper (to taste)

Directions:

  • Chop celery into fine pieces.
  • In a bowl, mix with tuna, chick peas and lemon.
  • In a small cup, mix the yogurt, mustard, mayonnaise, salt and pepper.
  • Add all ingredients together and mix.

Note: Ideally, served it with fresh lettuce or spinach.
