Cucumber Tuna Salad
( 2 Servings )


  • English cucumber, thinly sliced -- 1 large
  • Tuna, chunk -- 1 can
  • Salt and pepper -- To taste
  • 1 small onion, diced and wash
  • Nonfat plain yogurt -- 2 cups
  • Garlic powder -- 1 tablespoon
  • Grated Parmesan cheese -- 2 tablespoons


  • Arrange cucumber slices in a single layer in the bottom of a bowl. Sprinkle with salt and pepper. Add a layer of onions with tuna, and top with a layer of yogurt.
  • Continue layering all the remaining cucumbers, onions, and yogurt this order. Top off with a final layer of yogurt. Sprinkle with garlic powder, and parmesan cheese. Cover and refrigerate for 1 hour before serving.

Important: Make this salad the night before and keep it in the fridge. In the morning transfer each serving in a plastic container and take it with you for lunch.
