FRESH PESTO SAUCE
(5 PORTIONS)

INGREDIENTS:

  1. Basil... 1 big handful
  2. Almonds... 1 cup (250ml)
  3. Fresh Spinach... 3 big handful
  4. Parsley... 1 handful
  5. Salt & Pepper... To your taste
  6. Olive oil... 1/2 cup (125 ml)
  7. Garlic... 1 clove
  8. Water... 1/2 cup (125 ml)

INSTRUCTIONS:

  • Wash the basil and spinach.
  • Blend all ingredients in a food processor. Ideally, use an electric food processor.
  • Refrigerate any unused portions in small plastic containers for future meals.
  • For hot meals, cook the sauce on low heat for 2 minutes before serving.
  • For salads, mix the sauce (raw) with a.Avocado and spinach salad

Serve hot with any of these options:

  • Pasta and parmesan cheese
  • Boiled potatoes
  • Boiled yucca (cassava)
  • Boiled eggs

Serve fresh with any of these options:

  • Avocado and spinach
  • Boiled eggs and feta cheese
  • Boiled yucca (cassava)
  • Spinach pizza
  • Spinach and cheese sandwish

You can keep this sauce up to 4 days in your refrigerator - up to 2 months in your freezer.
