Turkey Salad
(Recipe for 1 servings)

Ingredient

  • 3 ounces of turkey breast (sliced into strips)
  • 2 cups of clean mixed greens - lettuce and spinach
  • 1 chopped tomato (or 1 small chopped apple as a substitute)
  • 3 halves olives (Kalamata olives)
  • 1 ounce of feta cheese (cut into small dices)
  • 1/4 cup dried cranberries
  • 1/2 tablespoon of dried parsley
  • 1 tbsp. light mayonnaise
  • 2 tbsp. plain yogurt
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Directions

In a large bowl, combine all the ingredients. Whisk to combine. Gradually whisk in oil. Taste and adjust for seasoning.
