Curry Chicken (Recipe for 4 servings) Ingredient
/ Amount Chicken breast 4 pieces Tomatoes, canned, stewed 1.4
cups Curry powder 2 tsps Onions, green (shallots) or scallions, raw, chopped
2 tbsps Apples, raw, peeled, sliced 1/2 cup Raisins, golden seedless, poured
1/4 cup Directions Cut chicken into chunks.
Put in a large sauté pan with the tomatoes, raisins, onions, and curry.
Bring to a simmer and cook, stirring, until chicken is tender -- about 10 minutes.
Add apple. Raise heat to bring to a boil, then simmer, uncovered, ten more minutes
until apple is tender and chicken is cooked. Serve over rice.
